Banana Dulce de Leche Empanadas


These Banana Dulce de Leche Empanadas came out so good and were so easy to make.  This is the last of the Empanada Series.  I think I'm going to miss making them.  I had so much fun sharing them with all of you, and eating them was pretty good too.   

Banana Dulce de Leche Empanadas

Ingredients:

4 bananas sliced
1 can Dulce de Leche (I used Le Lecheria)
2 TB butter
2 Pillsbury Thin Pizza Crust

Directions:

1.  Put 2 TB butter in a sauce pan, heat over medium heat until melted.

2.  Add the dulce de leche and stir until well mixed over low heat.

3.  Add the bananas and coat well with the dulce de leche.  Turn off heat.


4.  Preheat oven to 425 degrees and I lined pan the Reynolds non stick foil, but you could use non stick cooking spray.

5.  Unroll your pizza dough on a large cutting board.

6.  I used a small 5 1/2 to 6 inch saucepan lid to cut circles of dough for the empanadas   I got 4 circles of dough from each pizza crust.  (There is quite a bit of waste, you could probably rework the dough and get more circles)


8.  Start by putting a few tablespoons of your banana mixture on 1/2 of your dough.


 9.  Then fold the other half of dough over the bananas and roll the edges so that they are sealed. (Make sure they are sealed well so that nothing leaks out of the dough while cooking, mine did leak caramel.)


10.  Bake in the oven for 8 to 12 minutes or until lightly browned.

11.  Serve immediately or remove from pan and place on racks to cool
