Baked Italian Meatballs Gluten Free


I love these Baked Italian Meatballs and Park Avenue Pizza in Bloomfield, Ct.  makes the best Baked Meatballs and Baked Sausage.  Since I am back on my low carb diet after my cruise, I decided that I was going to make a low carb version of Baked Italian Meatballs.  So I have substituted Garbanzo flour for bread crumbs, and they came out perfectly.  I know you are going to love them.

Baked Italian Meatballs - Gluten Free

Ingredients:

2 lbs ground beef
1/2 cup garbanzo flour
2 tsp basil
2 tsp parsley
1 tsp rosemary
1 tsp thyme
3 cloves crushed garlic
2 TB worchestershire sauce
1 tsp salt
1/2 tsp pepper

Topping

4 cups marinara or meat sauce link to my recipe
2 cups mozzarella cheese
1 cup parmesan cheese

Directions:

Preheat oven to 350 and spray 9 x 9 inch casserole dish with non stick cooking spray.

Mix ground beef and all seasonings together and form into large meatballs.  About 3 inches each

Put the meatballs into the casserole dish.

Then pour the marinara sauce or Meat sauce over the meatballs.



Spread the mozzarella over the sauce and next spread the Parmesan on top of the mozzarella.



Put in the oven and bake for 1 hour.



Serves 4

I made mine in two batches, one with cheese and one without cheese for David.  I only got 7 meatballs, but you could easily get 8 meatballs.  Serve with a salad and you've got a meal.

A Blue Wave for Friday's Happy Hour


So a Blue Wave is my favorite drink from the cruise I just got off of to the Antarctic.  The cruise was amazing, but this drink was really delicious.  Very refreshing and very pretty.

Blue Wave

Ingredients:

2 oz Malibu Rum
2 oz Blue Curacoa
6 oz Orange Juice
splash of grenadine

Directions

Pour grenadine in the bottom of your glass.  

Add ice.

Mix the rum, blue curacao, orange juice.

Put grenadine in bottom of glass.

Put ice in glass

Pour over ice and serve.

Makes 2 cocktails.

Mockafoni and Cheese from Diana Rambles Blog


I got this great recipe for Mockafoni and Cheese From Diana Rambles' blog from Diana at Diana Rambles' Mockafoni and Cheese.  I made this recipe doubting that it would taste like mac and cheese, but I was proven wrong.  This is an amazing alternative to  real mac and cheese, for those of use who need to be grain free.  So here it a is in all it's glory.




Mockafoni and Cheese

Ingredients:

2 heads cauliflower
8 oz cream cheese
4 Tb Whipping Cream
4 cups grated cheddar cheese
1 tsp salt
1/4 tsp pepper

Directions:

Preheat oven to 350 degrees and spray a 9 X 13 inch pan with non stick cooking spray.

Steam cauliflower until tender. Set aside

Heat cream cheese in the microwave for 1 minute until soft.

Add 2 TB heavy cream and whisk together until well blended.

Stir in salt and pepper.

In a large bowl mix cauliflower and the cream cheese sauce.

Next add 2 cups grated cheddar cheese and stir until well mixed.

Pour into 9 X 13 inch pan and spread evenly in pan.

Spread the other two cups of cheddar cheese over the cauliflower.

Bake in oven for 30 to 40 minutes.  The cheese should be lightly browned in spots.

Take out of oven and Serve

Serves 8 to 10
