Oreo Stuffed Peppermint Cookies

I made these great Oreo Stuffed Peppermint Cookies, and they were delicious.  I saw a recipe a few weeks ago from Liz at A Sweet Baker for Candy Cane Stuffed Sugar Cookies, and thought I would give it a try.  Liz made her sugar cookies from scratch, but I needed something easy to make, and when I saw peppermint sugar cookie dough at the grocery store, I decided this was a recipe that I could make.

So for your viewing pleasure, here is a very easy recipe for Oreo Stuffed Peppermint Cookies.  They are delicious.


Oreo Stuffed Peppermint Cookies


Ingredients:


1 large Pillsbury Peppermint Cookie Dough
1 package Oreos
1 cup chocolate chips

Directions:


Preheat oven to 350 degrees and get a cookie sheet out.

Next cut a 1/2 inch slice of peppermint cookie dough, and flatten it out the cookie dough.

Then, put an oreo in the center of the cookie dough.



Next, start wrapping the cookie dough around the oreo.




You may need to add a little additional cookie dough on top of the oreo to make sure the the oreo is totally covered by the dough.




Next, you will put your cookies on a cookie sheet, and put them in the refrigerator to get the dough very cold.  It should take about 30 to 45 minutes.


Bake the cookies for 20 minutes.

Once done, put cookies on a rack immediately to cool off.


Next melt your chocolate chips in a bowl in the microwave.  I do 30 second increments stirring after each 30 seconds until it is melted and smooth.  It normally takes 1 1/2 to 2 minutes.

Next put the melted chocolate in a small ziploc bag, and cut of a tiny small corner.

Then drizzle the chocolate over the cookies.


You're are done.  This will make about 1 dozen cookies.
