Pumpkin Bread



Last week Danny and I had a huge cook fest.  We made breads, fudge, and scones.  One of the breads that we made were Homemade Pumpkin Breads.  I just use the Betty Crocker's Cookbook recipe, and it never fails to make a delicious loaves of bread.  Sometimes it's funny how we go back to basics, especially during the holidays.  

Danny and I made two loaves of the pumpkin bread.  He kept one out to eat and we froze one for Thanksgiving morning.  I like to make extra breads for Thanksgiving and Christmas morning.  That way I don't have to make more then the one holiday meal on those days.

Here is the recipe for



Pumpkin Bread

Ingredients:

2/3 cup shortening
2 2/3 cup sugar
4 eggs
2/3 cup water
3 1/3 cup flour
2 tsp baking soda
1 1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp cloves
1/2 tsp nutmeg 1 16 oz can pumpkin

Directions:

Heat oven to 350 degrees and spray 2 9x5 inch loaf pans with non stick cooking

Mix shortening and sugar in a large bowl. 

Next add eggs, pumpkin, and water.  Mix well

Then mix in flour, baking soda, salt, baking powder, cinnamon, cloves, and nutmeg.

Pour pumpkin bread mixture into loaf pans.

Put in oven and bake for 55 to 65 minutes or until a toothpick comes out clean.

Pull out of oven when done and cool on a rack for 15 minutes.

Then take out of pans and cool on racks.

Once cool wrap in plastic wrap and either eat or freeze.

Makes 2 loaves

Instant Hot Chocolate



Sorry this is up late today, but better late then never.  This recipe for Instant Hot Chocolate has been in our family for about 35 years, and I love it.  It is one of my favorite winter time treats.   When it is cold and snowing outside this is absolutely delicious and comforting.  So, today I'm sharing my recipe for Instant Hot Chocolate with all of you.  I hope you enjoy it during this holiday season and all winter.

Instant Hot Chocolate

Ingredients:

3 oz of coffee mate
3 packets of 1 qt instant dry milk packets
1/3 cup powdered sugar
1/3 can Ghiradelli Cocoa

Directions:

Mix all of the ingredients together and store in a jar or container.

To make 1 cup hot chocolate

Put 1/3 cup of this mixture into a mug of boiling water and stir.

I am so happy to share my recipe with you today.   This would also make a great Christmas Gift along with a pretty mug.  I used to give this to the kid's teachers during the holidays.

Semi Homemade Cinnamon Rolls



Cinnamon rolls are a favorite in our house.  So last Sunday I decided that I would make some Semi Homemade Cinnamon Rolls for Danny the easy way.  Yeah!!!  I had crescent rolls in the house and decided to use them, because I didn't want to make dough. (I've been sick with a cold for two weeks.)  So I pressed all of the perforations together, spread some butter all over the shreet of dough, and sprinkled cinnamon and sugar all over it. 
Boy did they come out great 

So now for this really easy recipe.

Semi Homemade Cinnamon Rolls

Ingredients

1 can Pillsbury Crescent Rolls
3/4 cup butter soft to spread
1/2 cup sugar
1 1/2 tsp cinnamon

Directions:

Preheat oven to 350 degrees and line a 9x9 inch pan with wax paper and spray with non stick cooking spray.

Unroll crescent rolls and press perforations and cut edges together and make 1 large sheet of dough.

Then spread 3/4 cup of softened butter over the dough.

Mix cinnamon and sugar together.

Then sprinkle thickly over the butter.

Roll the dough from the long side.  So that you have one long roll of rolls.

Slice the dough into 12 rolls.

Place rolls in greased pan.

Bake for 25 minutes.

Invert pan on a plate and serve.

Makes 12 pieces
