Olive Tapenade Bruschetta



Yesterday afternoon I made this great Olive Tapenade Bruschetta, and if I do say so myself, it came out delicious.  

We just moved into our new house in Florida on Wednesday (I love it, I'll post pictures at some point), and some old family friends came over to see the house.  I wanted to serve something with drinks before we went out to dinner, and I saw this recipe.  I got my new blender (a Ninja) and it came with a cookbook, and this recipe was in it.

It looked easy and since I love olives, I figured I would give it a try in my new Ninja.  Everyone loved it and it took all of 10 minutes to make.  I think this Olive Bruschetta Tapenade would be a great recipe for quick and easy during the holidays.



Olive Bruschetta Tapenade

Ingredients:

6 oz can black olives, drained
4 oz can green olives, drained
3 TB capers, rinsed
1 clove garlic
1 TB lemon juice
2 TB extra virgin olive oil
1 French baguette, sliced and toasted, drizzled with olive oil

Directions:

Place black olives, green olives, capers, garlic, lemon juice, and olive oil in a food processor or a Ninja.  Blend, but keep it a little chunky, not totally smooth.



Serve with toasted baguette, or even vegetables for something even healthier.
