Keto Peanut Butter Bread

We had a rainy cloudy day last week and so I decided I was going to do some baking and this delicious Keto Peanut Butter Bread was one of the tasty outcomes.  The original recipe came from Kirbie's Cravings, but I needed to alter it into a Keto recipe (no sugar, no flour).  This was a very simple recipe and takes no time at all to make.  By the way this Peanut Butter Recipe is delicious and I'm sure is good with sugar, just follow the recipe at Kirbie's Cravings, it is a gluten free recipe.

I know it has been a while since I have posted.  I will explain everything that has been happening in the next few weeks.  Thank you all for still following me, I really appreciate it.

Keto Raspberry Scones

These yummy Keto Raspberry Scones came out so good that I couldn't wait to share them with all of you.  I was going to post this in August, but I broke my ankle, so I have been recuperating for the last 4 months.  I also was not able to get all of the pictures that I wanted to get, but at least you can see what they look like.  I made them along with Spiced Keto Donuts, and Peanut Butter Bread the morning that I broke my ankle, I only got pictures of them cooling off.  I'm still not walking yet, which means I'm also not cooking much yet, so I hope that you will forgive the pictures.

The recipe is easy and the changes that I made to the original recipe from Brian Speaks make it Keto.  These would be great to make for a New Years morning brunch, or, if you're not too worried about your macros you could make them with dried cranberries for an amazing Christmas morning scone.

1/2 cup Trader Joe's Freeze Dried Raspberries

Directions:
Preheat oven to 350 degrees.

Spray non stick cooking spray on a cookie sheet or a silicone mat on a cookie sheet.

Mix all of your ingredients together, and drop onto your silicone mat.  Mine look like drip biscuits, I could not shape them.

Bake between 15 and 20 minutes.  Mine took closer to 20 minutes.

I hope you enjoy these delicious Keto Raspberry Scones.  They are a really delicious baked treat, when you are craving a pastry, and they taste delicious even if don't need to do Keto.  I always love hearing from you.

Have a great week.

Fried Rice - A Weight Watchers Recipe

What are your thoughts on Chinese Food and Weight Watchers?  Chinese food can be tough on a diet,  right, but this recipe for Fried Rice fits right into my Weight Watchers Program.  It is delicious, easy to make, and low in points! What more can you ask for?  I have been making fried cauliflower rice for a long time, but with Weight Watchers I can have real rice! Yeah!!! This fried rice is super filling, so it makes a meal all on its own for a meatless Monday meal, but you can also add meat to it if you are so inclined.  I have been traveling so I can not update you on my weight loss at this point, but I will after I get home next week.  In the meantime, here is this delicious Fried Rice Recipe.

Fried Rice - A Weight Watchers Recipe
Weight Watchers Smartpoints - 4 per 1/2 cup

Ingredients:
5 cups water
2 1/2 cups rice
2 Tb olive oil
1 Tb sesame oil
1 container 14.5 oz Trader Joe's Mirepoix (1/2 chopped onion, 3 carrots chopped, 3 stalks celery chopped)
2 tsp minced garlic or 3 cloves minced garlic
8 oz sliced mushrooms
1/4 cup low sodium tamari or soy sauce
1/4 cup Trader Ming's General Tsao's Stir Fry Sauce
1/8 cup Soy Vay Veri Veri Teriyaki Sauce
3 eggs, beaten

Directions:
Cook the rice according to the directions on the package. Mine is 5 cups water to 2 1/2 cups of rice.

Set aside.

Heat the olive and sesame oil in a wok or a very deep stir fry pan over medium high heat.

Add the mirepoix to the oil and saute until the onions are translucent.

Next add the garlic and saute for a minute, next add the mushrooms and cook for approximately 5 minutes.

Then add the rice and mix with the vegetables.

Add the tamari sauce, stir fry sauce, and teriyaki sauce and mix well.

Next, make a hole in the center of the pan, moving the rice and vegetables to the edges of the pan, and add the beaten eggs.

Cook just the eggs in the center of the pan just like you would scramble eggs, without the rice in it as much as possible.

Once the eggs are mostly cooked, stir into the rice and vegetable mixture. Add more tamari sauce if needed.

It is ready to serve.  You can add some kind of meat if you want, but we eat it like this and it is delicious.

Serves 20 -  1/2 cup servings

I hope that you give this recipe a try.  I would love to hear how you like it.  I always love hearing from you.

Have a great week.

Creamy Tomato Soup a Weight Watchers Recipe

Have you ever wondered how to make Creamy Tomato Soup?  I love tomato soup, it's my favorite soup.  For me it brings back wonderful childhood memories of lunches with tomato soup and delicious grilled cheese sandwiches.  It also reminds me of when my kids were little in Colorado and on would make it for them on snowy days.  I, also, love gooey, yummy, buttery grilled cheese sandwiches almost as much as I love tomato soup.   They kind of go together.  My mom always made Campbell's tomato soup, but I wanted to make a homemade soup that was a little more natural, a little healthier

Now I live in Southern Florida, so it is kind of like summer all year here, but when we get those cold days, I take full advantage of it. Most of the rest of you live in climates that have winters that are more conducive to soups and stews.  The weather is a little colder, so you can make these a lot more often then we can down here.  I guess I could make them more often if I turned the air conditioner on, but I think SW (sweet hubby) might get a little upset about the electric bill being higher just for a pot of soup.  The good news, though, is that yesterday we had a high of 66 degrees, which was great.  I could wear pants and even a sweater, but the best thing was that I could make this delicious Creamy Tomato Soup and share the recipe with all of you.

Creamy Tomato Soup
Serves 6 / 4 Weight Watchers Smart Points per Serving

Ingredients:
1 28 oz can tomato puree
1 28 oz can crushed tomatoes
1 medium onion chopped
2 cloves garlic
9 basil leaves cut up ( I stack them together, then roll them up, then cut them into thin strips.)

Directions:

Saute onions and garlic in olive until the onions are translucent.

Next add the tomato puree, crushed tomatoes, coconut sugar, pink Himalayan salt, both peppera, and chicken broth.

Bring to a boil, then turn the heat down and simmer for about 30 minutes.

Use a stick blender to make the tomato soup smooth, pureeing the onions into the soup.  If you don't have a stick blender you can put it in a blender to make it smooth.

Return the soup to the stove and over low heat add the coconut milk.

Bring to a light boil and then add the cut basil leaves.

It is now ready to serve.

I hope that you enjoy this recipe for Creamy Tomato Soup.  I loved it.  I'll share my recipe for grilled cheese sandwiches next week, and they are only 5 weight watchers points each.

Have a great weekend.

Chicken Piccata with Pasta A Weight Watchers Recipe

Adorned From Above www.adornedfromabove.com Chicken Piccata with Pasta 5 ounces uncooked capellini pasta 4 (4 ounce) boneless skinless chicken thighs - (the recipe called for breast cutlets, but I prefer thighs and the cutlets are very expensive) 1/8 tsp pepper 1/4 tsp salt ( I use pink Himalayan salt) coconut cooking spray (I use Trader Joes, but you can use you favorite type of cooking spray) 3 tsp vermouth or dry white wine 2/3 cup of fat free low sodium chicken broth 2 tsp lemon zest 1 1/2 TB lemon juice 2 TB butter 1 TB capers, drained

We are a participant in the Amazon Services LLC Associates Program, an affiliate advertising program designed to provide a means for us to earn fees by linking to Amazon.com and affiliated sites.

Today I am sharing this yummy recipe for Chicken Piccata with Pasta from the Weight Watchers Five-Ingredient 15-Minute Recipes Winter 2017.  This chicken piccata is so delicious and very easy to make and you can lose weight eating it.  I made it for my mom the other day, and she loved it so much we wrote the recipe down for her, also.  The lemon and lemon zest add so much flavor to this recipe.  It really makes the flavors pop.

I shared with you a few weeks ago that I had joined Weight Watchers, and I'm so grateful that I did.  As of Tuesday, February 7th, I have lost 10 pounds.  I am thrilled. That is 10 pounds in 5 weeks.  So approximately 2 pounds per week, which is great as far as I'm concerned.  I am eating everything that I want to eat.  Nothing is off limits.  I do have to make choices with my points, but isn't everything about choices.  I may forgo an english muffin so that I can have a cookie butter cheesecake bite from Trader Joe's. That is totally worth it to me, because there is no good food or bad food, no off limit foods, just choices about what I want to eat.  I get to make the choices not someone else saying you can't have that.  So for me this is a good thing.

Now, on to the recipe.  You know me, I always change things around. and this is not different.  Here is my version of this Weight Watchers recipe.

Chicken Piccata with Pasta
Makes 4 servings - 7 points per serving

Ingredients:

5 ounces uncooked capellini  pasta
4 (4 ounce) boneless skinless chicken thighs - (the recipe called for breast cutlets, but I prefer thighs and the cutlets are very expensive)
1/8 tsp pepper
1/4 tsp salt ( I use pink Himalayan salt)
coconut cooking spray (I use Trader Joes, but you can use you favorite type of cooking spray)
3 tsp vermouth or dry white wine
2/3 cup of fat free low sodium chicken broth
2 tsp lemon zest
1 1/2 TB lemon juice
2 TB butter
1 TB capers, drained

Directions:

Start bringing a pot of water to a boil for your pasta.

Season the chicken thighs with salt and pepper.  Set aside

Heat a large skillet and then spray a with the coconut oil spray.

Next add your chicken and cook for approximately 8 minutes per side.

While your chicken is cooking put the pasta in the pot and cook it according to the directions on the package.

Once your chicken is cooked, pull it out of the pan and set it to the side, keep warm.

Add the wine to the skillet and cook for about 30 seconds stirring and scraping any of the brown bits loose in the pan.

Next at the chicken broth, lemon juice, and lemon zest, bring to a boil and cook until reduced to 1/3 to 1/2 cup.

Then add the butter and capers. and then add the chicken back to the pan.

Make sure the chicken is well coated with the lemon sauce and it is ready to serve.

Put the pasta on a plate, put 4 ounces of chicken on top, and then pour sauce over each piece of chicken and the cappelini.

This is one of my favorite recipes.  I love chicken piccata, I love pasta, and I am so excited to be eating pasta again after so many years of avoiding pasta and breads.  Yeah!!!  Life is good.

I hope you like this recipe also.  Let me know what you think.  I always love hearing from you.

Have a great week.

I made these really easy, super cute Whoopie Pies for Valentine's Day to share with all of you.  I wish you could taste how delicious they are. Yum!!!  These are semi homemade Whoopie Pies.  I used big soft cookies from the store bakery and then fill them with the heavenly filling. There are two kinds in this batch, peanut butter cup cookies and chocolate chip cookies.  I think the peanut butter cup cookie Whoopie Pies were amazing.  I loved them.  It was reminiscent of marshmallow fluff and peanut butter for any of you who like marshmallow fluff / peanut butter sandwiches.  I thought it was absolutely delightful.  The chocolate chip ones are scrumptious also.  Are there enough adjectives describing these Whoopie Pies for all of you?  I was trying to be creative.

I first made them at Christmas for my daughter in law's birthday.  She requested them for her birthday party.  I didn't have time to make the devils food cakes for the Whoopie Pies, so I bought several different kinds of soft bakery cookies from the grocery store and then filled them.  She was very happy with this tasty alternative.  Everyone at the party thought they were really good also.

Anyway, here is the recipe.

Ingredients:

12 large soft bakery cookies (any flavor you would like)
4 cups Marshmallow Fluff - 16 oz plastic tub
2 cups Crisco Baking Sticks All Vegetable Shortening, 20 Ounce
3 cups powdered sugar
3 tsp OliveNation Alcohol Free Gluten Free Vanilla Extract - Add Great Depth of Flavor in Baking and Cooking Recipes - Size of 2 oz

*Marshmallow Fluff, Crisco, Olive Nation, and Culpit are not paying me to give you my opinion.  If you’d like to order any of these products, though, click the Amazon* links above (who will pay me a small commission for your purchase).

Directions:

Put the marshmallow fluff, shortening, and powdered sugar in you mixer and mix using the whisk attachment until well blended.

Next add the vanilla.

Spread a several large spoonfuls on one cookie, then top with the second cookie.  I used a lot of the marshmallow frosting

Then, over a plate sprinkle whatever sprinkles you have on the frosting edges.  I did this way rather then rolling them in the sprinkles, because it worked better.

Finish putting the rest of the cookies together and put them on a serving plate and you are done.

The only way these would be easier would be to buy them, or maybe buy the frosting.  This frosting is so good though, that you can be really proud of serving this for dessert.  They look and taste like you worked really hard on them.

I hope that you enjoy these Whoopie Pies.  I always love hearing from you.

Have a great week.

Adorned From Above www.adornedfromabove.com

In a recent post, I told all of you that I had joined weight watchers, well this Apple Banana Bake recipe is delicious and only 1 point per serving.  I am enjoying eating fruit after so many years of only eating very small portions.  I am loving making new recipes for desserts with fruit that are healthy and low in points.  This came out so delicious and I think you are going to love it as much as I did.  It was so easy to make and you should have all of the ingredients in you house.  Especially, since there are only 3 ingredients.  Give me an easy dessert recipe to make any day of the week.

I am also giving you an alternative option, using Log Cabin Sugar Free Syrup.  This would be 0 points and that would make the whole baking dish 0 points.  So you could eat 2 servings instead of 1 for 0 points.  This is a delicious alternative and if you are really hungry, it would certainly fill you up.

Bake for 45 to 55 minutes, until the crust is done and lightly browned. Let sit for at least 10 minutes before cutting to let the juices firm up Serves 8 with sugar 7 points without sugar 5 points

I joined Weight Watchers two weeks ago and I decided to make this delicious Apple Blackberry Gallette.  Yum!  It was delicious and super easy to make.  I always like easy recipes.  I adapted this recipe from a Weight Watchers recipe for a Pear Blackberry Gallette.  I didn't have any pears on hand, but I had lots of apples.  I took this to my cousin's house for dessert and was so excited to share it with everyone.  It is such a simple, rustic, looking kind of dessert.  Just so beautiful. It looks like something that would have been made for dessert after a long day working on the farm or ranch. That thought makes me feel all warm and fuzzy inside.  There is something so comforting about connecting with our roots through food.

Anyway, I never took the pictures yesterday, so I made another one today to share with all of you.  Only this time I made it without sugar and used my Sugar Free Sweetener - CopyCat Gentle Sweet, and that was just as delicious as the first Gallette with sugar.  So today you have a recipe for the Apple Blackberry Gallette with or without sugar.  The one with sugar is 7 points and the gallette without sugar is 5 points.  You get to choose.  You could also substitute Splenda, stevia, or Swerve confectioners also for the Copycat Gentle Sweet.

Now, I want to share why I joined Weight Watchers.  I am not an affiliate right now, though I have signed up for their affiliate program.  I have done every kind of diet on record, only to gain the weight back and even more.  I was hesitant to share my journey, because a lot of people who follow my blog are also friends, and it makes me feel bad about myself that I can not keep the weight off.  Not only keep the weight off, but to gain even more, is even more difficult to share with people.  I have even done Weight Watchers in the past, only to gain the weight back again.  I have been on a Ketogenic diet for the past year for health reasons and those issues were taken care of by the Keto Diet.  I have done low carb diets, counted calories, the Atkins Diet, The Scarsdale Diet, The Palm Beach Diet, lots that I no longer remember.  I joined a health club a few months ago, so I had already started exercising several times a week, but I knew that I needed something to help me with weight loss.  Enter, Weight Watchers!

The reason that I am sharing this with all of you now, is that I decided to be transparent about what I am doing in hopes that it may help someone else.  To help someone like me to feel better about themselves.  You are beautiful and your worth is not in how you look or how much you weigh but the kind of person you are.  I am telling you right now that no matter your weight, you need to love yourself.  For me, it is trying to see myself the way God sees me, and I know He sees a beautiful woman.  I had been thinking about this for several months and kept seeing Oprah in the WW commercials and decided to bite the bullet and join Weight Watchers again.

It has been even easier this time to start it.  I can eat anything, I just need to count my points.  Some of the things that I had really missed were pastries and breads.  I can eat these now, but again I have to count my points and make decisions about what I really want to eat, and what will I give up to have it.  I had pizza and garlic knots last week and it was delicious and worth every point.  What did I give up to have it, nothing really.  I had egg whites scrambled for breakfast, Trader Joe's Veggie Flaxseed tortilla chips for lunch, and for dinner and antipasto salad, 2 pieces of pizza, and 2 garlic knots.  All of that came to 32 points.  I get 30 points in a day and 35 extra points in a week, so I used 2 of my extra points for that day and it was worth it.  I also had a couple of apples for snacks that day, and they are 0 points.  Normally, my meals are a healthier then this, but this was exciting.  I didn't feel like I was cheating or doing something wrong, I am allowed to eat this.  It is a novel thought for me after years of not eating things because they are not allowed.  I guess that always set me up to fail.

Anyway, I lost 5.6 pounds in the first 12 days and that makes me happy!  I have a long way to go, but this is a good start.  Anyway, on to the recipe for this delicious Apple Blackberry Gallette.
