Lemon Petit Fours


These little Lemon Petit Fours came out so cute.  I made two different shapes Bunny Lemon Petit Fours and Flower Lemon Petit Fours.  It is may regular semi homemade cake recipe with a twist.  They made a simple petit four glaze.  You will look like you have been cooking up a storm, when really you just whipped these out in about an hour.


Lemon Petit Fours

Ingredients:

1 box Lemon Cake Mix
1 box lemon instant pudding
1 16 oz container sour cream
4 eggs
1/2 cup oil
1/2 cup water

Glaze:

8 cup powdered Sugar
2/3 white corn syrup
1/2 lemon juice
yellow food coloring

Other things you'll need:

Wilton bunny silicon mold ( I got mine at Michaels)
Wilton flower mold ( I got mine from Target)


Directions:

Preheat oven to 350 degrees and spray nonstick cooking spray in your molds.
Icing to dot eyes and noses on the bunnies

In a mixing bowl mix cake mix and lemon pudding blend well.

Then add sour cream, eggs, water, and oil and mix on low for a minute and then turn to high and mix for 2 minutes or until batter is smooth.

Spoon into molds until about 2/3 full

Cook bunny mold cakes for 12 minutes or until toothpick comes out clean.

Cook flower molds for 18 to 20 minutes or until toothpick comes our clean.

Cool in molds for 10 minutes on a wire racks, then turn out on wire racks and cool completely. 

Once cool if necessary you can trim the bottoms off of the cakes to lay flat.

lemon Glaze

Directions:

Mix powdered sugar, white corn syrup and lemon juice in a large bowl until well mixed.

Put in microwave for 45 seconds on high, stir again.

Glaze should be thin enough to pour over petit fours.

Spoon evenly over petit fours.

Heat in microwave for another 30 seconds if necessary as glaze starts to thicken.

Continue spooning glaze over peitit fours.

Once finished let sit for 1 hour to dry.

Then use the icing for the eyes and noses on the bunnies.

You are set and ready to serve.

This made 48 bunnies and 46 flowers

Jelly Bean Cooler for Friday's Happy Hour


Today we have Jelly Bean Coolers for Friday's Happy Hour.  We thought theses sounded like a fun Easter cocktail.  It is pretty easy to make and lots of fun to drink.  You can enjoy your jelly beans like a grown up.


Cherry Jelly Bean Coolers

Ingredients:

4 oz Jolly Rancher cherry jelly bean infused vodka
6 oz white cranberry juice
4 oz lemon lime soda
Jolly Rancher jelly beans (for garnish)

Directions:

Infuse Vodka 1 1/2 cups vodka with all of the Cherry jelly bean from 2 bags of jelly beans for 2 days.

Then strain in into a pretty bottle.

In a martini shaker with ice add jelly bean infused vodka, cranberry juice, and lemon lime soda and shake well.

Garnish with jelly beans.

Serves 2 7 oz cocktails.

Peanut Butter Brownie Cupcakes


These Peanut Butter Brownie Cupcakes are delicious.  My Aunt Laura made them a few years ago, and they were so good that I decided to make them for Charly's birthday.  She does not normally like frosting, but she liked this frosting.  It is a really simple recipe and the frosting is to die for.  The cupcake recipe is from Paula Deen on the Food Network and the frosting is from The Barefoot Contessa at Home CookbooK. (page 188)


Peanut Butter Brownie Cupcakes with Peanut Butter Frosting

Ingredients:

1 18 1/2 oz Brownie Mix
1 bag peanut butter and Milk Chocolate Chips

Directions:

Preheat oven to 350 degrees.  Line 18 muffin cups with paper liners and spray with non stick cooking spray

Make brownie mix according to the directions on the box.

Then fill muffin cups 1/2 full with brownie batter.

Then add 1 Tb peanut butter and milk chocolate chips on top of brownie batter

Next press chips into brownie batter until the batter comes to the top of the muffin cups.

Bake for 18 to 20 minutes or until center is firm.

Cool brownies on a rack for 10 minutes and then take them out of the muffin pan and cool an a rack totally before frosting.

Kathleen's Peanut Butter Icing

Ingredients:

1 cup powdered sugar
1 cup peanut butter
5 TB unsalted butter at room temperature
1 tsp vanilla extract
1/4 tsp Kosher salt
1/3 cup heavy cream

Directions:

Mix powdered sugar, peanut butter, butter, vanilla, and salt in a mixing bowl on medium-low until creamy.  Scrape down the sides as necessary.

Then add cream and beat on high until smooth.  I did need to add an extra TB of cream, so that it was creamy enough to frost the cupcakes.

Put into a frosting bag with a star attachment and pipe frosting on the cupcakes.

If you don't have frosting bags, you can just pipe it out of a ziploc bag or spread it on the cupcakes with a knife.

Natural Lotion Bars


I made Natural Lotion Bars for today, and I am loving them.  I had seen them online different blogs before, and I wanted to try making them myself.  I live in Denver and it is so dry here, that I am constantly putting on lotion.  We also travel a lot, and you can only carry so much in liquids on a plane, so I am never able to fit lotion in my bag.  I thought that a Lotion Bar was an ideal alternative.  I found these great little tins at Hobby Lobby to put them in, which I thought way to carry them in a purse.  These bars may be used on any part of your body; hands, legs, body.  


Natural Lotion Bars

Ingredients:

1/2 cup coconut oil
1/2 cup shea butter
4 oz beeswax
40 drops quince essential oil ( you may use any essential oil that you like)

Supplies:

Mini Muffin Tin
1 qt Mason jar (cleaned with alcohol)
Pan of boiling water 3 to 4 inches
mini tins to hold cooled bars (cleaned with alcohol)


Directions:

Put all ingredients in a mason jar with a lid on in a pan of boiling water.

Heat until all ingredients have melted.

With mitts remove the mason jar from the water and dry the jar off.

Remove the lid and pour liquid into mini muffin tin.  Mine filled about 18 muffin cups.

Let cool until hard.

Slip a knife down the side of each muffin cup to remove bars from muffin tin.

Put bars into tins.


The jar is difficult to clean.  I heated it in the microwave with water for about 1 minute or until the wax was floating in the water.  I then added Dawn dish soap to the water to help break the lotion apart and used a bottle washer to help clean the jar.

Pink Hand Knit Hat Pattern (Guest Post)


When Diana from Diana Rambles asked me to do a guest post, I immediately thought of this new Pink Hand Knit Hat Pattern.  I had just come back from my Antarctic cruise where I made this hat, and I thought that this would be a fun and easy project to share with all of you.

I realized when we were on our cruise that I was going to need a knit hat when we went hiking in Ushuaia, Argentina.  I, of course, had yarn with me, so I didn't have to buy a hat, I could make one.  This is a pretty simple hat pattern, and it is knit in the round on circular needles.


Pink Handknit Hat Pattern

Supplies:

16 inch size 5.5 mm circular needles
2 skeins Lion Brand Superwash Merino Cashmere
1 skein fun fashion yarn.  (Mine was just leftover from another project)
f or g crochet hook
1 stitch marker

Abreviations
K - Knit
P - Purl
K2tog - Knit 2 together

Directions:

Cast on 88 stitches and do not turn, place a stitch marker and knit in the first cast on stitch.  Make sure that your cast on stitches are on the needles straight and all facing in the same direction.

You have already k 1 in the first cast on stitch, k 1 in the 2nd cast on stitch, then p2, k2 around the rest of the first row.

Rows 2-5: K2, P2
Row 6 and next 5 inches: knit all stitches

Reducing stitches for rest of the hat.

Row 1 : K 6, K2tog to end of row
Rows 2-3: k all stitches
Row 4: K 5, k2tog to end of row
Rows 5-6: K all stitches
Row 7: K 4, K2tog
Row 8-9: k all stitches
Row 10: K 3, K2tog to end of row
Rows 11-12: K all stitches
Row 13: K 2, K2tog to end of row
Row 14: K all stitches
Row 15: K 1, k2tog to end of row

Thread yarn on a Large eyed needle and draw through all stitches on knitting needle twice.  Next take stitches off needle and tighten the yarn and then tie off.

Use the needle to weave in any loose threads or you can also do this with a crochet hook.  I prefer using a crochet hook to weave in loose ends.

I hope you like this hat pattern.  It is a pretty simple pattern.  It was fun to be able to wear also.  I always love hearing from you, and if you have any problems with the pattern feel free to contact me.

UPDATE
You will knit in the pink for about the first 3 1/2 inches, then switch to your different color for about an inch, then back to pink for about 3 inches, and then finish with your different color.  The hat will be approximately 8 to 8 1/2 inches from top to bottom.  This is a pattern where you could put the different colors anywhere you want.  You could even do more rows, just keep your measurements to 8 or 8 1/2 inches.  I keep the hats a little big so that I don't have such bad hat hair.
