Baked Bacon N' Egg Cups


I made these Bacon N' Egg Cups for Vince, Danny, and I one morning and they were so good.  They are really easy to make and a great breakfast for kids in the morning.  I did pre-cook the bacon, so that it would be a little crispy.  I like my bacon on the crispy side.

Bacon N' Egg Cups

Ingredients:

6 slices of bacon cooked in the microwave for 5 minutes
6 eggs
1 cup grated cheddar cheese

Directions:

Preheat oven to 350 degrees.

Spray a 6 cup silicone muffin pan with non stick cooking spray.

Put your bacon inside each muffin cup, around the edge.

Break one egg into each muffin cup inside of the bacon wrapped edge.

Sprinkle cheese on top.

Put on a cookie sheet and bake for 15 to 20 minutes or until the egg is cooked.

Remove the pan from the oven and pop the Bacon N' Egg Cups out of the muffin pan and serve.  Vince and Danny put them on toast, but they also suggested that we put toast in the bottom of each muffin cup next time.  If I do that I will post it.
