Poached Egg Surprise - Retro Recipe Saturday



Today I am making a recipe from one of my Aunt Char's cookbooks.  It is called Poached Egg Surprise from a cookbook called Family Fare from the U.S. Department of Agriculture from 1955.  Here are the pictures of the book.  It is pretty interesting.




Since this recipe was written in the 50's there are some things, that I was not sure about, like table fat.  So I made some substitutions, but I posted the original recipe for you to see.   This recipe came out amazing.  It was so good, I hope that you give it a shot.

Poached Egg Surprise

Ingredients:

1 cup milk
2 TB table fat  - I will use butter
2 TB flour
1/4 tsp salt
2 TB chopped green pepper ( I didn't have any peppers so I used green onions instead.)
4 slices toast
soft sharp cheese  ( the only soft cheeses I had were a garlic herb cheese or Laughing Cow Original.  I chose to use Laughing Cow.)
4 eggs
1 tsp vinegar to water for poaching eggs

Directions:

Melt your butter.



 Add the flour and salt.  


Cook for a few minutes, then slowly add the milk to your flour mixture, so that your sauce does not get lumpy.


Add green onions.



Cook  while stirring until thickened, about 5 minutes.



Spread toast thickly with cheese

Poach eggs until firm.



Place over toast and pour sauce over all of it. 



Serve at once.
