Sweet Potato Casserole


This Sweet Potato Casserole is another family favorite.  The recipe came from a friend's mother and once I started making it for Thanksgiving and Christmas, I never looked back.  Normally I make it with Yams, but this year I found fresh Sweet Potatoes at H Mart, and Asian Grocery Store near us.  It came out delicious with the fresh sweet potatoes.  

Sweet Potato Casserole

Ingredients:

7 sweet potatoes
1 cup butter, cut up
3/4 cup brown sugar
5 eggs
1/4 cup whipping cream
1/2 tsp salt
1/4 tsp pepper

Directions:

Preheat oven to 400 degrees.

Bake sweet potatoes until done, about 1 hour. 

Then turn the oven down to 350 degrees.

Spray a 3 quart casserole dish with non stick cooking spray. 

let potatoes cool a little bit, until you can pick them up to peel them.

Peel the skins off of the potatoes and put in a mixing bowl.

Add butter, brown sugar, eggs, cream, salt, and pepper to the potatoes and mix with a mixer until smooth. 

Pour into the casserole dish and cook for 1 hour or until a knife comes out clean.

Serves 12 to 14

  1. Hi Debi, I would like to try your recipe. Did you cut the potatoes after you peeled off the skin and mixed the butter, brown sugar, eggs, cream, salt, and pepper? I would like to believe you did cut them? or did you have to mash them before mixing using a mixer until smooth? I need your advice please! Thank you!
