St. Patty's Day Frozen Creme de Menthe Cake


Today we have a St. Patty's Day Frozen Creme de Menthe Cake and it is amazing.  I made this as a combination of two of my recipes, Bernadette Lego's Creme de Menthe Pie and my Chocolate Chocolate Chip Cake.  It is really a killer desert and really simple. So here it is.



St. Patty's Day Frozen Creme de Menthe Cake

Ingredients:

Cake:
1 box devils food cake mix
4 eggs
1 16 oz container sour cream
1 box chocolate fudge pudding
1/2 cup oil
1/2 cup water
1 box Andes mints chopped and split 1/4 and 3/4's

Topping:
2/3 cup half and half
24 large marshmellows ( not jumbo's just large )
1 oz. creme de menthe
1/2 oz creme de coco (white)
1 cup whipping cream (whipped)



Directions:

Preheat oven to 350 degrees, put wax paper on bottom of a spring form pan and  spray with nonstick cooking spray.

Mix devils food cake mix and pudding, until well blended.  

Next add sour cream, eggs, oil, water and mix until smooth about 2 to 3 minutes.

Then add 3/4 of the chopped Andes Mints into the batter and stir.

Pour into spring form pan and bake for 60 minutes or until toothpick comes out clean.

Remove from oven and cool on a wire rack.

While cake is cooling make the Creme de Menthe mixture.

Combine the marshmallows and  half and half.  Heat until marshmallows are melted.  Set in refrigerator to cool, while you make whipped cream.

Once cooled, fold in liquor and whipped cream.

Poor in spring form pan on top of the cake and freeze.  It is ready in a couple of hours.

Spinkle the last 1/4 of your Andes Mints on top of the cake and serve. 

Remove outside of your spring form pan, and remove bottom of pan and wax paper form the cake.  Put cake on a cake plate to serve.



This makes 12 to 16 pieces of cake.

This cake came out so amazingly good.  You have to give it a try.  I hope you love it as much as we did.  I always love hearing from you.
