Bacon Wrapped Scallop for Father's Day


These Bacon Wrapped Scallop for Father's Day are a simple, delicious meal.  They are so great and pretty to serve to guests or for a romantic evening at home with your significant other, but they will make a Father's Day Dinner really special.  I know these will be a big hit with all of those Dads out there.  How can they not be, they are wrapped in bacon.


Bacon Wrapped Scallops

Ingredients:

16 thick hickory smoked slices of bacon
1 1/2 lb large scallops (16 pieces)

Directions:

Preheat your oven to 400 degrees and line a baking sheet with foil and spray with non stick cooking spray.

Lay you bacon on a baking sheet.

Partially precook the bacon in the oven for 10 minutes, then check them and turn them and cook for another 10 to 15 minutes depending on how thick your bacon is.  You don't want it totally cooked, it will finish cooking once it is wrapped around the scallop.

Let the bacon cool down enough to be able to handle it with your hands.

Wrap a slice of bacon around each scallop.

Put a toothpick through the bacon and scallop to hold the bacon to the scallop.

Bake in the oven for 10 to 15 minutes.  I turned mine after 10 minutes and then cooked them for another 5 minutes.

Remove from oven and place on a serving platter and serve.

Makes 4 servings of 4 pieces

Pineapple Juice Cocktail from The Settlement Cookbook


Today's Happy Hour Recipe is a Pineapple Juice Cocktail from The Way to a Man's Heart The Settlement Cookbook (copyright 1947).  I am a little early on the Retro Recipe for this week, but I thought that this looked like a good drink for the week.  


Pineapple Juice Cocktail

Ingredients:

1 cup sugar
1/2 cup water
2 cups moscato or 1 cup sprite (for alcohol free version)
1 1/2 pineapple juice
1/2 cup orange juice

Directions:

Mix sugar and water in a sauce pan.

Bring to a boil and boil gently for 5 minutes.

let cool, once cool add moscato or sprite, pineapple juice, and orange juice.

Stir and pour over ice.

Makes 3 to 4 servings

Chocolate Cream Cheese Cake Gluten Free / Sugar Free


I made this Chocolate Cream Cheese Cake Gluten Free / Sugar Free so that I would be able to have a special treat.  I got the recipe from the book The Joy of Gluten Free, Sugar Free Baking by Peter Reinhart and Denene Wallace.  I am trying to make more grain free baked goods, so that I can have delicious snacks like the rest of the world.  Sometimes I feel so deprived, not being able to eat grains or sugar.  These did ease the feelings of deprivation a little.  I will say that the cake was a little dry, so in the recipe I have given you I have it cooking for less time.  I also need people to know that since this is being cooked with stevia or Splenda, there is a little bit of an aftertaste.  I just want to be very honest.  I would make this again, because I can't eat regular cake, but this would not be a recipe for everyone.


Chocolate Cream Cheese Cupcakes Gluten Free/ Sugar Free

Ingredients:

2 cups hazelnut flour
2 cups almond flour
2 1/2 cups Splenda or Stevia in the Raw
3/4 cup unsweetened cocoa powder
2 tsp baking powder
1/2 tsp salt
5 eggs
8 oz cream cheese at room temperature
3/4 cup unsalted butter
2 tsp vanilla
1 1/2 tsp liquid stevia

Directions:

Preheat oven to 375 degrees and rub butter all over the inside of a bundt pan and place in freezer

Mix hazelnut flour, almond flour, splenda or stevia, cocoa powder, baking powder, and salt in a medium sized bowl until well blended.

In a large bowl mix eggs, cream cheese, butter, vanilla, and liquid stevia until for 1 minute.

Next add the flour and mix low to start, to incorporate with the egg mixture.  Then turn mixer to medium high for 1 minute.  The batter  will be very thick.

Remove the bundt pan from freezer and coat the pan with almond, hazelnut, or coconut flour.  Make sure that it is well coated to that the cake does not stick.  Spoon the batter into the pan.

  Jiggle pan to get rid of air pockets and even out the batter.

Bake for 30 minutes and then turn the pan in the oven.  Cook for another 15 to 20 minutes.  I cooked mine for 20 and it was a little too dry.

Let cool on a wire rack for 20 minutes in pan.  Turn onto a rack to finish cooling.

Decorations for a Baby Shower


Today I'm showing you The Decorations for a Baby Shower.  We put all of these lanterns and pompoms above the food table and I love the way they looked over the table.  It just came out so cute.  I found all of the decorations that we used at Hobby Lobby, but I think that you would be able to find them at most party stores or places like JoAnn's or Michaels.


Decorations for a Baby Shower

Supplies:

1 package of 3 pink lanterns
1 package of 3 zebra lanterns
1 package of 3 paper pompoms
9 clear top tacks
27 feet of decorative ribbon cut to 2 to 3 food lengths (This is subjective.  Get what you need to hang the lanterns and pompoms at different heights above the table)

Directions:

Follow the directions on the packages to put the lanterns together.

Follow the directions on the package to make your pompoms puffy and full.  (You basically just start separating the different pieces of paper until they are in the shape of a pompom)

Tie ribbons to the tops of the lanterns and the pompoms.  We did have to tape the ribbons to the pompoms to make them more secure.

Then using your tacks, start tacking them to the ceiling above the table where you want them.  We tacked them at different lengths to the ceiling.
