Chicken Casserole

I am a total comfort food addict.  So today, I am giving you my recipe for Chicken Casserole.  Most of you probably had it as a kid.  It is an old standby that has not changed a lot over the years.  The only thing that I have changed over time is that I use fresh chicken and mushrooms in it rather then canned chicken and canned mushrooms.

So today I present you with my recipe for:

Chicken Casserole


2 16 oz container sour cream
2 cans creams of mushroom soup
1 rotisserie chicken (skinned, boned, and cubed)
1 16 oz container sliced mushrooms
1 tsp italian herbs
1 tsp salt
1/2 tsp garlic powder
1/4 tsp pepper
1 lb cheddar jack cheese
1/4 cup corn flake crumbs
1 lb wide egg noodles cooked


Preheat oven to 350 degrees and spray a 9x13 inch casserole dish with non stick spray.

Mix sour cream, cream of mushroom soup, mushrooms, chicken, italian herbs, salt, garlic powder, pepper.

Next mix in cooked egg noodles.

Put into casserole dish.

Spread cheese on top.

Then sprinkle corn flake crumbs on top of cheese.

Next bake for 45 minutes.

Once done, pull out of the oven and let sit for 5 minutes before serving.

Makes 12 servings.
