Bacon Wrapped Meatloaf


I made this bacon wrapped meatloaf a few nights ago and it was quite delicious. I had never made meatloaf before so I used my moms recipe for the meatloaf and then I just put my bacon in brown sugar to make candied bacon to wrap around it. Here's the recipe, enjoy!

Bacon Wrapped Meatloaf

Ingredients:

2 lbs lean ground beef
1 lb ground pork
1/2 cup oats
1 cup brown sugar barbeque sauce separated in half
2 eggs
2 TB Worcestershire sauce
1 1/2 tsp salt
1 1/2 tsp garlic powder
1/2 tsp pepper
8 slices bacon cut in half
4 TB brown sugar

Directions:

Preheat oven to 350 degrees.  Spray a 9 x 13 inch pan with non stick cooking spray.

In a large bowl mix ground beef, ground pork, oats, eggs, 1/2 cup barbeque sauce, Worcestershire sauce, salt, garlic powder, and pepper together until well mixed with your hands.

Shape into a loaf and put into sprayed pan.

Next pour the other 1/2 cup of the barbeque sauce over the meatloaf. 

Take your bacon slices and put into brown sugar.

Put in a pan and cook for 2 minutes to render some of the fat.  

Next, lay the slices of bacon over the top of the meatloaf.

Bake for 1 to 1 1/2 hours, or until it reaches 150 to 155 internal degrees.

Serves 6, unless it's at my house with 2 24 year old man-children, in which case you'll get about 4 servings.
