Indian Spiced Tomato Soup


We have snow in Denver today, so this Indian Spiced Tomato Soup a delicious cold weather dinner.  We really loved the flavor and the smell throughout my house was amazing.  I love Indian food, and this soup recipe did not let me down.  Give it a try for dinner tonight, it wont let you down.


Indian Spiced Tomato Soup

Ingredients:

2 TB olive oil
2 tsp ground cardamom
2 tsp ground cumin
1/4 tsp cayenne pepper
1 onion chopped
6 cloves garlic
1/2 tsp salt
2 28 oz cans crushed tomatoes
1 1/2 cups cream
2 TB fresh lime juice

Directions:

Heat olive oil in a large deep pan for soups.  I used my 5 quart sauce pan over medium heat.

Add cardamom, cumin, and cayenne, and cook stirring until fragrant, about 1 to 2 minutes.

Add onion and garlic and cook until onions are soft about 5 to 10 minutes.

Add tomatoes and salt bring to a boil and the cook for 1 hour on simmer.

Once cooked, turn to medium and add cream.  Cook for 5 to 10 minutes, until soup it hot.

Next, turn off heat and add lime juice.

You are done.  Goes great with Naan bread.

Serves 4.

    John can't stand Indian food ( he's ridiculously fussy )
    If I take out the cumin - he take the dog out for a very long walk lol
    But I think I may have to try this soup...............
    He can walk Soda for a day or two
