Mini Turkey and Cheese Quiches



I made these cute little Turkey and Cheese Quiches for breakfast one day as another experiment, and was pleasantly surprised.  The crescent rolls made a great crust for these little mini quiches.  I shared them with the office and they were a hit.

So today I present you with

Mini Turkey and Cheese Quiches

Ingredients:

1 container Grands Crescent Rolls
5 eggs beaten
1 cup grated colby jack cheese
1 cup turkey lunch meat sliced
1/4 cup heavy whipping cream

Directions:

Preheat oven to 350 degrees and spray 4 extra large muffin cups with non stick spray.

Unroll crescent rolls and press perforated edges together.

Cut into 4 rectangles.

Put crescent roll rectangles into the muffin cups and roll the edges like you would roll the edges of a pie crust.


Mix your beaten eggs with the cream.

Then add the turkey and the cheese to the egg mixture.


Use a gravy ladle to put the egg mixture into the muffin cups.


Bake for 20 to 25 minutes or until egg is set in the center.


Gently remove from the pan and serve.

Serves 4

Beach House Cocktail



Okay, are you ready?  When we are at the Mexico house this is one of my favorite drinks, it's called the Beach House Cocktail.  I made it up several years ago, and my friend Shawna and I love having this while we walk on the beach with our wonderful husbands.  It is really light and refreshing, especially when it's hot outside.  I know all of you are going to love it too. 

So here you are, this with an amazingly delicious cocktail.

Beach House Cocktail

Ingredients:

4 oz rum
6 oz pineapple juice
1 oz cranberry juice

Directions:

Mix ingredients in a pitcher.

Put ice in two glasses

Pour over ice and serve.

Makes 2 really yummy drinks.

The Joy of Gluten-Free, Sugar-Free Baking Cookbook Review



I recently bought the cookbook The Joy of Gluten-Free, Sugar-Free Baking by Peter Reinhart and Denene Wallace, and I absolutely love it.

If you have been following me, you see that I post lots of recipes that have flour and sugar.  These are things that I can only taste, but should not be eating, but my family loves them, so they are always happy to be my taste testers.  I have health issues with grains and sugars, so it is best for me to avoid them.  If I don't, I suffer from severe swelling and breathing issues, but like many of you, I love sweets also.  My motto when I was younger was look at the dessert menu first, in order to decide what I want for a meal in order to leave room for dessert.  Anyway, that is not something I can do anymore and still live a healthy life.  So several years ago, I started removing grains and sugars out of my diet, but it is sometimes difficult to live with, and find desserts that I love.  Well this cookbook has been a treasure in my life.

The Joy of Gluten-Free, Sugar-Free Baking is wonderful.  Most gluten free cookbooks substitute flour with other grains like rice flour, potato flour, or similiar items.  I have found some cookbooks that use nut flours, but nothing like this cookbook.  The recipes are amazing.  They have great recipes for cookies, waffles, cupcakes, cakes, breads, even pretzels and all of them use nut flours, stevia, and splenda rather then the traditional gluten-free, sugar-free alternatives.  

This cookbook has opened up a whole new world in baking for me.  I am so grateful, because I love my patries, and this offers alternatives that are healthy options for me.  

I will start posting some of the recipes that I have been making for all of you to see over the next few weeks.  Most are fairly simple, with ingredients that you can find a your local health food stores.  It is a little more expensive to cook this way, but at least it offers some healthy alternatives for people who have issues with grains and sugars.

Now for those of you reading this, know that I will still post the regular, simple, semi-homemade recipes that I normally post, but these new recipes will be sprinkled in with the others. I would love to be able to offer delicious healthy alternatives for people like me, who love baked goods, but have difficulty with some of the ingredients.
