Cheesecake Cupcakes Gluten Free Sugar Free


This is a delicious recipe for Gluten Free Sugar Free Cheesecake Cupcakes.  I have adapted it from my regular cheese cake recipe and added a sour cream frosting.  It is so good, and it's making me hungry thinking about them.


Cheesecake Cupcakes Gluten Free/Sugar Free

Ingredients:

5 8 oz packages cream cheese softened
6 eggs
1 16 oz container sour cream
2 cups splenda or stevia
2 TB cornstarch
1 tsp vanilla

Sour Cream Topping
1 16 oz sour cream
1/2 cup splenda or stevia
1 1/2 tsp vanilla

Directions:

Preheat oven to 350 degrees.  Put muffin cup liners into 24 muffin cups and spray with non stick cooking spray.

Next add your softened cream cheese to a mixing bowl and whip your cream cheese with you mixer. 


 Once the cream cheese is whipped add the eggs one egg at a time.  You will need to scrape down the sides of your bowl every once in a while to make sure that it is mixed well. 


Next add the sour cream, and mix well.  

Then add the splenda or stevia, cornstarch, and vanilla.  Mix well until the cream cheese mixture is smooth.  There should not be any lumps in your filling.


Bake cheesecake for 22 to 27 minutes or until the center of the cupcakes are firm and lightly browned.  ( if they still shake in the middle they are not done.  They will rise slightly in the middle, but not as high as the edges.) It is okay if they crack a little, that is normal.

Once done, turn the oven off and leave in the oven for 30 minutes with the door open.  

Next remove the pan from the oven and let sit on counter for another 30 minutes before removing from the muffin cups..

Then take the cheesecake cupcakes out of the oven and cover and put in the refrigerator to finish cooling.  

Meanwhile, mix together the sour cream, splenda or stevia, and vanilla until smooth.

Once the cheesecake cupcakes are completely cool, you will add the sour cream frosting to the cupcakes.

Strawberry Lemonade Cake Cocktail for Friday's Happy Hour


Today we Strawberry Lemonade Cake Cocktails for Friday's Happy Hour and are they good.  After Charly's baby shower we had some Strawberry Lemonade left, so I decided to add some of my 3 Olives Cake Vodka.  It was like drinking the Strawberry lemonade Cake that I made for the shower.  Delicious!!!

Strawberry Lemonade Cake Cocktails

Ingredients:

2 oz 3 Olives Cake Vodka

Directions:

Pour the cake vodka over ice.

Add the strawberry lemonade.

Stir.

Makes 1 cocktail

Saffron Shrimp


Today I am sharing my recipe for Saffron Shrimp.  I made it for Charly's Baby Shower at her request. It is a really simple and delicious recipe.  I am giving the recipe two different ways.  One with regular saffron and one with a ground saffron that I bought in Egypt (probably not pure saffron, but delicious).  You can sometimes find it in Mediterranean markets here.  Here is a link to My Spice Sage .  They do carry a ground saffron, it's similar to what I use.


Saffron Shrimp

Ingredients:

2 TB ground saffron
1 lbs peeled, deveined, tail removed shrimp
2 Tb olive oil
3 cloves minced garlic
1 tsp salt
1/2 tsp pepper

In the alternative use 2 tsp saffron threads in 1 TB hot water.  Let it sit for 20 minutes, then press the back of a spoon against the threads in the hot water to make a paste.  Then use in your recipe. (by the way, you can find inexpensive saffron at Trader Joe's if you have one near you)

Directions:

Heat a skillet over medium heat, and then add your olive oil.  

Heat for a minute and add the garlic and cook for another minute or two.

Next add the saffron, salt, and pepper and mix and cook for another minute.

Then add the shrimp and cook for approximately 5 to 7 minutes, until it turns pink.  Make sure not to overcook your shrimp or it will turn rubbery.

Remove from heat and serve with rice or some buttered pasta.

Makes 4 to 6 servings

Votive Candle Party Favors


We made these cute Votive Candle Party Favors for Charly's Baby Shower.  Laurie, Ryan's mom, and I spent an afternoon getting to know each other better, and putting the votive candles together.  There was a lot of trial and error, getting the ribbon to stick to the glass and finally settled on double sided tape, which was Charly's suggestion.  That worked, after trying regular tape and a hot glue gun.  They were pretty simple to make once we figured it out.  

Votive Candle Party Favors

Supplies:

24 votive candles
18 feet of 1 1/2 inch ribbon (we used pink and white striped ribbon)
36 feet of 3/8 inch ribbon (we used pink with white baby feet ribbon)
double sided stick tape
(The ribbon that we used came on a role of 3 ribbons from Party City the brand is Offrey)

Directions:

1.  Place your double stick tape in the center of the votive candle, all the way around meeting at beginning of the tape.

2.  Measure the circumference of the votive candle and then measure your ribbon adding an extra 1/2 inch for the end.  Cut the ribbon.  

3.  Place the ribbon around the candle. Sticking it to the tape.


4.  Next, place a small piece of tape over the beginning of the ribbon and stick the end of your ribbon to that piece of tape.  That way the ribbon is secure all the way around the candle and the last 1/2 inch lays nicely over the beginning of the ribbon for a nice seam.


5.  You will need to cut your 3/8 inch ribbon the length for the circumference of the candle plus an additional 14 inches for the bow.

6.  I found it easiest to wrap the thinner ribbon around the center of the first ribbon, and then tie it into a tight knot.

7.  Then I tied the bow.  I did the old rabbit ears trick, like tying a shoe lace.  Make two sides of the bow and then wrap them around each other and tie the bow.

8.  Next, adjust the length of the bows and trim the ends of the ribbon at a right angle.

Grace Part 2


I really love reading the verses about Grace, so this week I am sharing Grace Part 2, more verses on Grace.  God's grace is so important and there are great verses from both the old and new testaments. Here are just a few.

Grace

Psa 84:11  For the LORD God is a sun and shield: the LORD will give grace and glory: no good thing will he withhold from them that walk uprightly. 

Pro 3:34  Surely he scorneth the scorners: but he giveth grace unto the lowly. 

Zec 12:10  And I will pour upon the house of David, and upon the inhabitants of Jerusalem, the spirit of grace and of supplications: and they shall look upon me whom they have pierced, and they shall mourn for him, as one mourneth for his only son, and shall be in bitterness for him, as one that is in bitterness for his firstborn.

Act 4:33  And with great power gave the apostles witness of the resurrection of the Lord Jesus: and great grace was upon them all. 

Act 14:3  Long time therefore abode they speaking boldly in the Lord, which gave testimony unto the word of his grace, and granted signs and wonders to be done by their hands.
