Saffron Shrimp


Today I am sharing my recipe for Saffron Shrimp.  I made it for Charly's Baby Shower at her request. It is a really simple and delicious recipe.  I am giving the recipe two different ways.  One with regular saffron and one with a ground saffron that I bought in Egypt (probably not pure saffron, but delicious).  You can sometimes find it in Mediterranean markets here.  Here is a link to My Spice Sage .  They do carry a ground saffron, it's similar to what I use.


Saffron Shrimp

Ingredients:

2 TB ground saffron
1 lbs peeled, deveined, tail removed shrimp
2 Tb olive oil
3 cloves minced garlic
1 tsp salt
1/2 tsp pepper

In the alternative use 2 tsp saffron threads in 1 TB hot water.  Let it sit for 20 minutes, then press the back of a spoon against the threads in the hot water to make a paste.  Then use in your recipe. (by the way, you can find inexpensive saffron at Trader Joe's if you have one near you)

Directions:

Heat a skillet over medium heat, and then add your olive oil.  

Heat for a minute and add the garlic and cook for another minute or two.

Next add the saffron, salt, and pepper and mix and cook for another minute.

Then add the shrimp and cook for approximately 5 to 7 minutes, until it turns pink.  Make sure not to overcook your shrimp or it will turn rubbery.

Remove from heat and serve with rice or some buttered pasta.

Makes 4 to 6 servings

    I am so excited to make this. I have saffron from Spain a friend gave me, but only know one dish to use it with. So I'm buying shrimp tomorrow! Thanks for sharing your recipe!
