Bacon Wrapped Scallop for Father's Day


These Bacon Wrapped Scallop for Father's Day are a simple, delicious meal.  They are so great and pretty to serve to guests or for a romantic evening at home with your significant other, but they will make a Father's Day Dinner really special.  I know these will be a big hit with all of those Dads out there.  How can they not be, they are wrapped in bacon.


Bacon Wrapped Scallops

Ingredients:

16 thick hickory smoked slices of bacon
1 1/2 lb large scallops (16 pieces)

Directions:

Preheat your oven to 400 degrees and line a baking sheet with foil and spray with non stick cooking spray.

Lay you bacon on a baking sheet.

Partially precook the bacon in the oven for 10 minutes, then check them and turn them and cook for another 10 to 15 minutes depending on how thick your bacon is.  You don't want it totally cooked, it will finish cooking once it is wrapped around the scallop.

Let the bacon cool down enough to be able to handle it with your hands.

Wrap a slice of bacon around each scallop.

Put a toothpick through the bacon and scallop to hold the bacon to the scallop.

Bake in the oven for 10 to 15 minutes.  I turned mine after 10 minutes and then cooked them for another 5 minutes.

Remove from oven and place on a serving platter and serve.

Makes 4 servings of 4 pieces
