Cheesecake Cupcakes Gluten Free Sugar Free


This is a delicious recipe for Gluten Free Sugar Free Cheesecake Cupcakes.  I have adapted it from my regular cheese cake recipe and added a sour cream frosting.  It is so good, and it's making me hungry thinking about them.


Cheesecake Cupcakes Gluten Free/Sugar Free

Ingredients:

5 8 oz packages cream cheese softened
6 eggs
1 16 oz container sour cream
2 cups splenda or stevia
2 TB cornstarch
1 tsp vanilla

Sour Cream Topping
1 16 oz sour cream
1/2 cup splenda or stevia
1 1/2 tsp vanilla

Directions:

Preheat oven to 350 degrees.  Put muffin cup liners into 24 muffin cups and spray with non stick cooking spray.

Next add your softened cream cheese to a mixing bowl and whip your cream cheese with you mixer. 


 Once the cream cheese is whipped add the eggs one egg at a time.  You will need to scrape down the sides of your bowl every once in a while to make sure that it is mixed well. 


Next add the sour cream, and mix well.  

Then add the splenda or stevia, cornstarch, and vanilla.  Mix well until the cream cheese mixture is smooth.  There should not be any lumps in your filling.


Bake cheesecake for 22 to 27 minutes or until the center of the cupcakes are firm and lightly browned.  ( if they still shake in the middle they are not done.  They will rise slightly in the middle, but not as high as the edges.) It is okay if they crack a little, that is normal.

Once done, turn the oven off and leave in the oven for 30 minutes with the door open.  

Next remove the pan from the oven and let sit on counter for another 30 minutes before removing from the muffin cups..

Then take the cheesecake cupcakes out of the oven and cover and put in the refrigerator to finish cooling.  

Meanwhile, mix together the sour cream, splenda or stevia, and vanilla until smooth.

Once the cheesecake cupcakes are completely cool, you will add the sour cream frosting to the cupcakes.

Strawberry Lemonade Cake Cocktail for Friday's Happy Hour


Today we Strawberry Lemonade Cake Cocktails for Friday's Happy Hour and are they good.  After Charly's baby shower we had some Strawberry Lemonade left, so I decided to add some of my 3 Olives Cake Vodka.  It was like drinking the Strawberry lemonade Cake that I made for the shower.  Delicious!!!

Strawberry Lemonade Cake Cocktails

Ingredients:

2 oz 3 Olives Cake Vodka

Directions:

Pour the cake vodka over ice.

Add the strawberry lemonade.

Stir.

Makes 1 cocktail

Saffron Shrimp


Today I am sharing my recipe for Saffron Shrimp.  I made it for Charly's Baby Shower at her request. It is a really simple and delicious recipe.  I am giving the recipe two different ways.  One with regular saffron and one with a ground saffron that I bought in Egypt (probably not pure saffron, but delicious).  You can sometimes find it in Mediterranean markets here.  Here is a link to My Spice Sage .  They do carry a ground saffron, it's similar to what I use.


Saffron Shrimp

Ingredients:

2 TB ground saffron
1 lbs peeled, deveined, tail removed shrimp
2 Tb olive oil
3 cloves minced garlic
1 tsp salt
1/2 tsp pepper

In the alternative use 2 tsp saffron threads in 1 TB hot water.  Let it sit for 20 minutes, then press the back of a spoon against the threads in the hot water to make a paste.  Then use in your recipe. (by the way, you can find inexpensive saffron at Trader Joe's if you have one near you)

Directions:

Heat a skillet over medium heat, and then add your olive oil.  

Heat for a minute and add the garlic and cook for another minute or two.

Next add the saffron, salt, and pepper and mix and cook for another minute.

Then add the shrimp and cook for approximately 5 to 7 minutes, until it turns pink.  Make sure not to overcook your shrimp or it will turn rubbery.

Remove from heat and serve with rice or some buttered pasta.

Makes 4 to 6 servings

Votive Candle Party Favors


We made these cute Votive Candle Party Favors for Charly's Baby Shower.  Laurie, Ryan's mom, and I spent an afternoon getting to know each other better, and putting the votive candles together.  There was a lot of trial and error, getting the ribbon to stick to the glass and finally settled on double sided tape, which was Charly's suggestion.  That worked, after trying regular tape and a hot glue gun.  They were pretty simple to make once we figured it out.  

Votive Candle Party Favors

Supplies:

24 votive candles
18 feet of 1 1/2 inch ribbon (we used pink and white striped ribbon)
36 feet of 3/8 inch ribbon (we used pink with white baby feet ribbon)
double sided stick tape
(The ribbon that we used came on a role of 3 ribbons from Party City the brand is Offrey)

Directions:

1.  Place your double stick tape in the center of the votive candle, all the way around meeting at beginning of the tape.

2.  Measure the circumference of the votive candle and then measure your ribbon adding an extra 1/2 inch for the end.  Cut the ribbon.  

3.  Place the ribbon around the candle. Sticking it to the tape.


4.  Next, place a small piece of tape over the beginning of the ribbon and stick the end of your ribbon to that piece of tape.  That way the ribbon is secure all the way around the candle and the last 1/2 inch lays nicely over the beginning of the ribbon for a nice seam.


5.  You will need to cut your 3/8 inch ribbon the length for the circumference of the candle plus an additional 14 inches for the bow.

6.  I found it easiest to wrap the thinner ribbon around the center of the first ribbon, and then tie it into a tight knot.

7.  Then I tied the bow.  I did the old rabbit ears trick, like tying a shoe lace.  Make two sides of the bow and then wrap them around each other and tie the bow.

8.  Next, adjust the length of the bows and trim the ends of the ribbon at a right angle.

Grace Part 2


I really love reading the verses about Grace, so this week I am sharing Grace Part 2, more verses on Grace.  God's grace is so important and there are great verses from both the old and new testaments. Here are just a few.

Grace

Psa 84:11  For the LORD God is a sun and shield: the LORD will give grace and glory: no good thing will he withhold from them that walk uprightly. 

Pro 3:34  Surely he scorneth the scorners: but he giveth grace unto the lowly. 

Zec 12:10  And I will pour upon the house of David, and upon the inhabitants of Jerusalem, the spirit of grace and of supplications: and they shall look upon me whom they have pierced, and they shall mourn for him, as one mourneth for his only son, and shall be in bitterness for him, as one that is in bitterness for his firstborn.

Act 14:3  Long time therefore abode they speaking boldly in the Lord, which gave testimony unto the word of his grace, and granted signs and wonders to be done by their hands.

7 Minute Frosting


This is my Aunt Laura's delicious recipe for 7 Minute Frosting and it came out so good.  It tastes like marshmallow and is soft and fluffy and absolutely delicious.  It was great on the Ombre Pink Lemonade Zebra Cake.  It is actually the perfect frosting for this cake. 

7 Minute Frosting

Ingredients:

1 1/2 cup sugar
1/4 tsp cream of tarter
1/8 tsp salt
1/3 cup water
2 egg whites
1 1/2 tsp vanilla

Directions:

Put all of you ingredients in the top of a double boiler.

Beat with a hand held mixer for one minute and then place it over the double boiler.

Beat with an electric mixer for 7 minutes or until stiff and holds its shape.


Add the vanilla at the end and make sure that it is completely mixed into the frosting.

My Aunt's 7 Minute Frosting was so good with this cake.  I hope you like the recipe also.  It would go great with any cake.  I always love hearing from you.

Strawberry Lemondade


For Charly's Baby Shower I made Strawberry Lemonade, which is one of her favorite drinks.  When we go to Red Robin, they probably refill her Freckled Lemonade 3 to 4 times during a meal.  So I thought this would be a perfect drink for her baby shower, and it would even fit in with the color theme.  It's a pretty easy recipe and tasted delicious.  

Strawberry Lemonade

Ingredients: 

1 cup sugar 
1/2 cup hot water 
1 cup fresh squeezed lemon juice 
8 cups cold water 
2 cups strawberries 
1/2 cup sugar 

Directions:

1.  Put the sugar in a bowl, add the hot water and stir until dissolved. Set aside. 

2.  In a separate bowl use a potato masher and mash the strawberries along with the 1/2 cup of sugar. Set aside.

3.  To get the most juice from the lemons, roll the lemons against the counter until soft, this will get you the maximum amount of juice from your lemons. Squeeze the lemons, about 8 will give you 1 cup of juice.

4.  Next, put the strawberries in the in a pitcher, then add the sugar water mixture, stir. Then add the lemon juice, then the 8 cups of water. Stir well.

5.  To serve add ice to glass, then add peach lemonade. Put a peach or lemon slice on the side of the glass for a garnish.

Ombre Pink Lemonade Zebra Cake


Today is a recipe for the Ombre Pink lemonade Zebra Cake that I made for Charly's Baby Shower. This cake was so yummy and it was so cute.  We made my Aunt Laura's 7 Minute Frosting, which was delicious with the cake.  The recipe was delicious and tasted like marshmallow and was perfect for the delicate pink lemonade flavor.  I also love the way all of the layers came out.  The Pink Lemonade Cake recipe came from Let Them Eat Cake! Pink Lemonade Cupcakes.


Ombre Pink Lemonade Zebra Cake

Ingredients:

2 1/2 cups flour
1 1/4 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1 1/4 cups sugar
1/2 cup + 2 TB vegetable oil
5 egg whites
3/4 cup frozen pink lemonade (concentrate)
1 tsp vanilla
1/2 cup + 2 TB buttermilk
red food coloring
four zebra striped edible paper.  I got mine from Hobby Lobby
3 containers White Frosting (you can used pre made or use my Aunt's recipe for 7 Minute Frosting)
Pink store bought frosting (I bought some from my bakery)
Small rattles (I found them at party city in the baby shower section)
A small decoration for on top of the cake (I used 2 it's a girl cupcake toothpicks)

(To make a 10 in 4 layer cake you will need to double this recipe.  I made it in two batches)

Directions:

Preheat oven to 350 degrees and spray 2 10 inch cake pans.  (I made the recipe in two batches, rather then 1 double batch, because I only have two 10 inch cake pans)

In a bowl mix flour, baking powder, baking soda, and salt until well blended.

In a large bowl using a mixer either hand or stand mixer, whisk together, sugar, oil, egg whites, pink lemonade concentrate and vanilla until well blended.

Add 1/3 of the flour mixture and whisk until blended.

Add half of the buttermilk and mix until well blended.

Continue adding the flour and buttermilk until everything is mixed together.  Do not over mix.

Next separate your batter into two bowls. Add 1 drop red food coloring into one bowl and mix well.  Add 2 drops food coloring into the other bowl and mix well.

Pour batter into 2 10 inch cake pans and bake for 15 to 18 minutes or until a toothpick comes out clean.

Let cool on racks for 15 minutes before removing from pans.  Remove from pans and then finish cooling on racks.

Repeat this process with the next batch, but when you separate the batter into two bowls you will add 3 drops food coloring to one bowl and 4 drops food coloring to the 2nd bowl.

I layered my layers with the darkest on the bottom up to lightest at the top.

Spread the white frosting in between the layers and then on the outside and top of the cake.

Cut your edible strips to fit on the sides of the cake and follow directions on the package for putting on the cake.

I also cut 1 round circle for the top center of the cake.

I then piped the pink frosting around the bottom and top of the cake covering the edges of the edible paper.

I also piped a second line of frosting around the inside of the top of the cake to cover the edge of the circle of edible paper.

I also piped the pink frosting to cover where the edible papers meet from top to bottom and then at equal intervals around the cake.

Place the plastic rattles on top of the cake in the frosting and a few around the bottom of the cake.

Place the little cupcake decorations towards the back of the cake together.
