Banana Dulce de Leche Empanadas

These Banana Dulce de Leche Empanadas came out so good and were so easy to make.  This is the last of the Empanada Series.  I think I'm going to miss making them.  I had so much fun sharing them with all of you, and eating them was pretty good too.

Banana Dulce de Leche Empanadas

Ingredients:

4 bananas sliced
1 can Dulce de Leche (I used Le Lecheria)
2 TB butter
2 Pillsbury Thin Pizza Crust

Directions:

1.  Put 2 TB butter in a sauce pan, heat over medium heat until melted.

2.  Add the dulce de leche and stir until well mixed over low heat.

3.  Add the bananas and coat well with the dulce de leche.  Turn off heat.

4.  Preheat oven to 425 degrees and I lined pan the Reynolds non stick foil, but you could use non stick cooking spray.

5.  Unroll your pizza dough on a large cutting board.

6.  I used a small 5 1/2 to 6 inch saucepan lid to cut circles of dough for the empanadas   I got 4 circles of dough from each pizza crust.  (There is quite a bit of waste, you could probably rework the dough and get more circles)

8.  Start by putting a few tablespoons of your banana mixture on 1/2 of your dough.

 9.  Then fold the other half of dough over the bananas and roll the edges so that they are sealed. (Make sure they are sealed well so that nothing leaks out of the dough while cooking, mine did leak caramel.)

10.  Bake in the oven for 8 to 12 minutes or until lightly browned.

11.  Serve immediately or remove from pan and place on racks to cool

Makes 8 medium sized empanadas

Peanut Butter Cookies Gluten Free / Sugar Free

I made these delicious Peanut Butter Gluten Free Sugar Free Cookies the other day and they are amazing.  I got the recipe from Tash at The Velvet Moon Baker and tweaked it a little bit.  Her cookies are gluten free, but not sugar free, so I used a few different sugar free sweeteners instead of the sugar that Tash called for.  I loved them, and have been able to have some great guilt free treats over the last few days, which is wonderful.

Peanut Butter Gluten Free Sugar Free Cookies

Ingredients:

1 cup natural peanut butter
1/2 cup stevia
1/2 cup splenda
1 egg
1 tsp ground cinnamon

Directions:

1.  Preheat your oven to 350 degrees and line your cookie sheet with a non stick paper.  I used non stick foil.  You do not need to spray the foil.

2.  Beat your peanut butter, stevia, and splenda really well for about 5 minutes.

3.  Then mix in the egg until well combined.

4.  Next add the cinnamon and mix well.

5.  Make 12 balls and place them on your cookie sheet.

6.  Then use a fork and press the tops of the balls down making a criss cross pattern.

7.  Bake cookies for 6 to 8 minutes.  Mine took 8 minutes.  Be careful to not to over bake the cookies.

8.  Carefully remove cookies from your pan and let cool on a rack.

Makes 1 dozen cookies

I hope you like this recipe as much as I do.  I am so happy that I can have a sweet snack the doesn't make me swell up like a balloon.  I always love hearing from you.

Enjoy!!!

Heart Ring Tutorial

Today we have a Heart Ring Tutorial.  I saw a Heart Ring on Stumbleupon, and decided that these would make cute Mother's Day Presents.  I could not find the blog to tell you where it came from originally, but I did want you to know it is not an original idea.  I have had to wing it with making it, again, because I couldn't find the blog post that it came from.  It is a pretty simple project to make and doesn't take a lot of special equipment.

Heart Ring Tutorial

Supplies:

Silver wire
ring mandrel (for sizing and shaping)
wire cutters
wire loop pliers
flat pliers with plastic head

Directions:

1.  Cut a piece of silver wire about 2 inches long.

2.  With your wire loop pliers shape the right side of your heart. (I used the 2nd tier on the pliers)

3.  Next form the center of the heart with the smallest part of the wire loop pliers.

4.  Then shape the other side of your heart. (like you did in step 2.

5.  Next,  lay the wire from the 2nd side of the heart over the plat piece from the first part of the heart.

6.  Then using the wire loop pliers loop the first part of the heart over the 2nd part of the heart.

7.  Then push the heart flat against the mandrel and wrap the wire around it at the ring size that you need.

8.  When you bring the wire up the other side, trim the wire so that it will be long enough to latch over the corner of the heart.

9.  Then bring the wire to the inside of the loop of the heart.

10.  Using your wire loop pliers make another loop over the outside of the heart

11.  Trim any pieces that are too long if necessary.

You are done.  These are pretty simple rings to make once you figure out the heart loops.  They are free form, so they do not need to be perfect.  I think they would make cute little gifts.

I hope you like this Heart Ring Tutorial.  I always love hearing from you.

Humility - Matthew 3: 13 to 3:17 Bible Study

Today I am writing about Humility in Matthew 3:13 - 3:17.  I love the humility that Jesus shows when he asks John to Baptize him.  The entire conversation is so beautiful, and then God speaking from Heaven is so amazing.  I can only imagine what everyone was thinking and feeling when all of this happened.  They had to be in awe.  Then again God is pretty Awesome!!!

Mat 3:13  Then cometh Jesus from Galilee to Jordan unto John, to be baptized of him.

Mat 3:14  But John forbad him, saying, I have need to be baptized of thee, and comest thou to me?

Mat 3:15  And Jesus answering said unto him, Suffer it to be so now: for thus it becometh us to fulfil all righteousness. Then he suffered him.

Mat 3:16  And Jesus, when he was baptized, went up straightway out of the water: and, lo, the heavens were opened unto him, and he saw the Spirit of God descending like a dove, and lighting upon him:

Mat 3:17  And lo a voice from heaven, saying, This is my beloved Son, in whom I am well pleased.

Matthew 3:13 - 3:17

I hope this touches your heart today as it has mine.  I always love hearing from you.

Have a blessed day.

Baby Shower Planning

I have been planning a Baby Shower with my friend Gabi for Charly.  Charly has a baby girl due on July 31, 2013, and we are so excited.  Her name is Mia Grace, and here is her ultra sound picture.

So here are some of the deserts we are planning on doing and making.  I have been gathering tons of ideas from Pinterest.  (Love That!!!!)

We are making Chocolate Cupcakes with a Pink Frosting.   Not sure what kind yet.  ( I ordered these really cute cupcake cups from WholePort.com
Where you can get All Supplies for Your Beautiful Handmade Life)

We will have a Ombre Pink Lemonade Cake with my Aunt Laura's 7 Minute Icing and then surrounded with Wilton's Zebra Print Sugar Sheets. I was able to buy the zebra sheets from Hobby Lobby.  (I thought about Fondant, but I haven't worked with that before.)

We will also have a desert table with Pink Oreo Truffles, Pink Rice Crispy Treats, and lots of different kinds of Pink Candies.  We have little pink and white chevron striped bags and cute Pink and Bright Pink Polka Dot Cups to put them in.  (Also from Wholeport.com where you can get All Supplies for Your Beautiful Handmade Life.)

I was also able to get these cute Hello Kitty  and animal baking items from wholeport.com  There is a link to their baking molds (From $0.99, Crazy Prices for different kinds of Silicone Baking Molds)

I'm not sure what I will do with them yet, but once I figure it out, I'll let you know.

I have a link in my sidebar for Wholeport.com, but I have purchased all of these items myself.  I didn't want to recommend a company or product that I had not tried out and paid for myself.  The shipping can take a little time and is on the high side, but they have so many choices, that I was not able to find on other websites for the prices that I could get on Wholeport.  I will keep you updated about my order,  once I receive it, but I am pretty excited at what I was able to buy.

As we plan more for Charly's Shower I will keep you updated, and once we have had the shower I will post lots of pictures.

I always love hearing from you.
Have a great week.
